Mediterranean Chickpea Tacos

Cooking Instructions

  1. Defrost 24 hours in refrigerator.
  2. Heat a large skillet over med/high heat. Add chickpea/veggie mixture to skillet and cook until carrots are tender, about 10 minutes. Season to taste with salt and pepper.
  3. Wrap tortillas in damp paper towels and heat in microwave for 30 seconds or until tortillas are warm and pliable.
  4. Serve chickpea mixture in warm tortillas topped with tzatziki sauce. Add fresh lettuce and tomatoes (not included) if desired.
