Chickpea Salad with Whole Grain Buns

Description

Mashed chickpeas, red onion, and celery are combined with creamy vegan mayo, Dijon mustard, vinegar, and pickle relish to create the perfect sandwich filling or salad topping. Kit includes four whole grain sandwich thins or GF buns!

Cooking Instructions

  1. Defrost 24 hours in refrigerator.
  2. Cut one corner off bag containing chickpea mixture. Drain any water off chickpeas.
  3. Empty chickpeas into a large bowl. Using a fork, mash the chickpeas, leaving about half of them whole.
  4. Stir vegan mayo mixture with a spoon to combine.
  5. Pour mayo mixture over chickpeas and mix well.
  6. Serve on sandwich thins topped with lettuce and tomato and a side of chips or baby carrots.
