Lemony Quinoa with Chickpeas and Greens (GF)
This protein rich dish is sure to please the whole family! Quinoa is simmered in vegetable broth with onions, garlic, greens, chickpeas, fresh lemon juice, and parsley. Health never tasted so good!
- Garlic Powder
- Lemon Juice
- Lemon Pepper
- Vegetable Base
- Defrost 24 hours in refrigerator.
- Add quinoa, chickpea/greens mixture, and 2 cups water to a large, high sided skillet. Bring mixture to a boil over high heat.
- Cover, reduce heat to low, and simmer until quinoa is tender, about 15-20 minutes.
- Remove cover, stir, and season to taste with salt and pepper. Serve with a fresh spinach salad and fruit.
