Sweet and Sour Lentils (GF)

Description

Lentils, onion, bell pepper, and carrots are infused with flavor in this exciting dish! Instead of seasoning these lentils with traditional Indian spices, we have given them the flavor of the Far East with ginger, soy sauce, rice wine vinegar, and a dash of brown sugar for sweetness. Serve with brown rice (included).

Cooking Instructions

  1. Defrost 24 hours in refrigerator.
  2. Bring 1 cup water to a boil in a small saucepan. Add rice to water and return to boil. Cover, reduce heat to low, and simmer until water is absorbed and rice is tender, about 20 minutes. Set aside.
  3. Meanwhile in another saucepan, add lentils and 2 cups water. Bring to a boil over high heat. Lower heat to med/low and simmer uncovered for 30-40 minutes or until lentils are tender. Add water if necessary to prevent sticking.
  4. While lentils and rice are cooking, heat a large skillet over med/high heat. Add veggie mixture to skillet along with 1/2 cup water. Cook until carrots are soft, about 10 minutes. Stir in lentils and season to taste with salt and pepper or soy sauce. Serve lentil/veggie mixture over rice.
